5 Each(s) large ripe tomatoes
1 Each(s) large green pepper, membranes and seeds removed, chopped
1 Each(s) spanish onion, finely chopped
1 Each(s) or 2 cans mild green chiles (or roast, skin and chop fresh)
1 Each(s) bunch scallions
1 Tablespoon(s) lemon juice
1 Each(s) large clove garlic, minced
Mix all ingredients except scallions and refrigerate over night. In the morning, add in scallions. Serve at room temperature.
