Ingredients: 1 Each(s) Large egg 1 Each(s) Sausage patty (Morningstar breakfast is good) 1/4 Cup(s) Shredded sharp cheddar 1 Each(s) Flour Tortilla 1/4 Cup(s) Salsa 1/8 Cup(s) Sour cream |
Directions:
Scramble an egg a little wet. If you're a microwave geek, beat egg in small bowl and microwave for about 20 seconds. Watch for it to take off...when it starts puffing up, stop cooking. Egg should be a bit wet. Mash with a fork.
Microwave breakfast patty for about 30 seconds. Crumble.
Spread egg in middle of tortilla and top with crumbled sausage, shredded cheese, and homefries (if handy). Wrap burrito and microwave about 30 seconds until cheese is melty.
Top with sour cream and/or salsa or put them inside. If you fold up one of the ends before heating, and wrap it in wax paper or plastic wrap when it's done, this is a great on-the-go breakfast.
For sit-down breakfast, use regular scrambled eggs with a dash of chili powder, fresh cooked new potato homefries with garlic and onions, top with cheese, zip under the broiler until melted, then top with salsa, sour cream and/or guac. Sprinkle some chopped fresh cilantro on top. Serve with hair of the dog. |
